d’Araprì, gli spumanti che nascono dal jazz

Mettete insieme tre appassionati di jazz e Champagne, un po’ di follia giovanile e le gallerie tufacee sotto San Severo e avrete la migliore azienda di spumanti del Mezzogiorno d’Italia. Correva l’anno 1979 quando tre amici, Girolamo d’Amico, Louis Rapini e Ulrico Priore, decisero tra una jam session e un’altra, nella loro abbagliante San Severo (Foggia), di fare delle grandi bollicine made in Puglia. Nasce così d’Araprì, crasi delle prime lettere dei loro cognomi.

«In quegli anni – racconta Girolamo D’Amico – l’idea era fare qualcosa di diverso: avevamo preso un po’ di mosto e l’avevamo imbottigliato nella speranza che diventasse spumante. Le bottiglie scoppiarono tutte e questo evento tragico ci fece capire che dovevamo fare le cose per bene. Abbiamo così iniziato a studiare quali erano le tecniche di produzione dello spumante seguendo i maestri francesi e, da allora, non abbiamo più sbagliato». Nel 1985 le prime 3mila bottiglie di Metodo Classico da Bombino bianco: una rivoluzione perché questa uva era poco considerata e nessuno l’aveva mai spumantizzata. Il vino va a ruba e di lì a poco la produzione si moltiplica. Oggi le bottiglie sono più di 110mila e gli ettari vitati 20, sempre concentrati sulle uve del territorio quali Bombino bianco, Montepulciano, Nero di Troia e il “francese” Pinot nero che qui, tuttavia, parla il dialetto foggiano. «La territorialità dei nostri spumanti – spiega D’Amico – sta nell’utilizzo, unico in Italia, delle varietà locali di questa parte settentrionale della Puglia»: vero colpo di genio della cantina.

Al vertice della produzione, ancora oggi esclusivamente di spumanti, il Rosé Sansevieria, 100% Nero di Troia, seguito dallo storico Nature Dama Forestiera, blend di Montepulciano e Pinot Nero. A cascata le altre etichette tra cui spiccano il Brut Riserva Nobile da uve Bombino bianco e Gran Cuvée XXI Secolo, da Bombino, Pinot nero e Montepulciano. Melodia e risposta in un calice spumeggiante, alla maniera di Cole Porter, nella suggestione, a ogni sorso, di una Puglia del vino che non ti aspetti.
